Balanced Bootcamp’s Strawberry Eclair Cake

HUNTSVILLE, Ala. (TENNESSEE VALLEY LIVING) - Summer is right around the corner and if you’re trying to decide on what dish to bring to cookouts, but are also on a health journey, it can be hard.

Brittany Olsen with Balanced Bootcamp says there are easys swaps you can do to make popular desserts low-calorie! One of her favorites a strawberry eclair cake. It’s super easy to make and a crowd pleaser.

What you’ll need:

- 20 ounces of light Greek vanilla nonfat yogurt

- 1 ounce of sugar and fat free cheesecake instant pudding

- 8 ounce tub of zero sugar Cool Whip

- 2 cups of sliced strawberries

- 6 honey graham crackers

- 4 ounces of cream cheese frosting

Directions:

- Mix together Cool Whip, Greek yogurt, and dry pudding mix

- Slice strawberries

- In an 8x8 dish, lay 3 graham crackers

- Layer mixture on top, adding strawberries, repeat once

- Melt frosting + drizzle on top

- Refrigerate overnight before serving
