Healthy Holiday Cheese Dip

HUNTSVILLE, AL (WAFF) -

Cheez Sauce:

2 cups water

1/4 cup clean, raw cashews

4 ounce jar pimientos

1/2-1 cup nutritional yeast flakes

1 1/2 tablespoons cornstarch

1 tablespoon fresh lemon juice

1 1/2 teaspoon salt

1/2 teaspoon onion powder

1/2 teaspoon garlic powder

Blend cashews in about 1/2 cup of the water until very smooth. Add remaining water and other ingredients and continue blending until smooth.

Add remaining water and other ingredients and continue blending until smooth. Simmer in a heavy saucepan until thickened, stirring constantly, about 5-6 minutes.

You can also add 1/2 teaspoon cumin, about 1/2 cup of your favorite vegetarian beef or sausage, or your favorite salsa to the cheez sauce. Serve with tortilla chips.
