BATON ROUGE, LA (WAFB) -
It may seem early, but it's already crawfish season again.
Several stores around Baton Rouge are already selling the South Louisiana favorite.
Usually at the beginning of the season, you see small mud bugs with hard shells coming out of the boilers, but some folks say that's not the case this year.
"They good eating. They got a good seasoning to them," said Mark Rogillio with LA Boilers. "The shells aren't very hard, and they soak up that seasoning real good.
Industry observers estimate that Louisiana accounts for more than 90 percent of U.S. crawfish production.
